Potato brinjal recipe (Aloo baingan ki chatpati sabzi)

Today we will make a  tasty recipe that is 'Aloo baingan ki chatpati sabzi'.

Potato-brinjal recipe ( Aloo baingan ki chatpati sabzi):
Cooking time : 45 minutes
Servings: 4-6 persons
Utensils used:
    1 pot or Karahi or frypan 
    1 ladle
    1 teaspoon 
    1 tablespoon 
Ingredients:
  1. Brinjal (Baingan ) : 400 gm
  2. Potato : 400 gm
  3. Refined oil or mustard oil: 4-5  ladles
  4. Indian bay leaf ( tej patta) : 1
  5. Cumin seeds: 1/2 tablespoon 
  6. Garlic : 10 pieces finely chopped or paste 
  7. Ginger : 1 tablespoon finely chopped or paste 
  8. Onion : 3 medium size finely chopped 
  9. Tomatoes : 3 medium size finely chopped or paste or puree 
  10. Mango powder (Amchur powder) : 1/2 teaspoon 
  11. Lemon : 1/2 
  12. Coriander powder: 1 tablespoon 
  13. Kashmiri lal mirch powder: 1/2 teaspoon 
  14. Garam masala powder : 1/2 tablespoon 
  15. Red chilli powder: 1/2 teaspoon 
  16. Black pepper powder: 1/2 teaspoon 
  17. Turmeric powder: 1/2 teaspoon 
  18. Salt : according to your taste 
  19. Green chillies: 4
  20. Fresh coriander: 1 tablespoon finely chopped 
Pre-Preparation:
Cut brinjal and potatoes long and not thick. Finely chop garlic, ginger,  onions,  tomatoes  and green chillies. 
Procedure:
  • Firstly, we will fry brinjals, pour 3 ladles of mustard oil or refined oil in frypan on medium flame and put brinjal pieces in it. Add salt according to the quantity of brinjals and fry on high flame and keep sauting for 6-7 minutes . When brinjals changes colour take out them. After that pour 1 more ladle of mustard oil or refined oil.  Add potatoes in it and fry on high flame for 9-10 minutes. In between keep sauting to avoid sticking.When potatoes become soft take out them.
  • Now, we prepare masala , pour 1 more ladle of mustard oil or refined oil.Add 1 tej patta,  1/2 tablespoon cumin seeds,  10 pieces finely chopped garlic,  1 tablespoon finely chopped ginger and 3 finely chopped onions. Saute for 5 minutes . 
  • When the onions become translucent,  then add coriander powder, red chilli powder,  turmeric powder,  black pepper powder,  Kashmiri lal mirch powder,  Amchur powder and round slices of 1/2  lemon. After 1 minute, add 3 finely chopped tomatoes and add salt. Saute for 5-6 minutes on medium flame. Then cover the lid and cook for 5 minutes or until oil separates from masala.
  • Here, add fried potatoes and brinjals. Cook for 5 minutes . Add 1 -2 tablespoons of water whenever recipe starts getting  sticky. Cover the lid and cook for 10 minutes on low flame . In between keep checking after every  2-3 minutes if  masala starts getting sticky then add 1-2 tablespoons of water.  You can add little more water if you want curry . 
  • Aloo baingan recipe is ready to serve. Add  1/2 tablespoon garam masala powder , 2 finely chopped green chillies and also 1 tablespoon finely chopped fresh coriander for garnishing .
