Pumpkin recipe ( Petha ki khatti meethi sabzi)

Today we will make a extremely delicious sweet sour Pumpkin recipe( khatti- meethi pethe ki sabzi).

Pumpkin recipe:
Cooking time : 45 minutes
Servings: 4-6 persons
Utensils used:
1 pot or Karahi or frypan
1 ladle
1 teaspoon
1 tablespoon
Ingredients:
- Pumpkin ( Petha) : 1 kg
- Mustard oil or refined oil : 3 ladles
- Indian bay leaf ( tej patta) : 1
- Jaggery or sugar : nearly 2 tablespoon
- Fennel ( saunf) : 1/2 teaspoon
- Fenugreek seeds ( methi dana) : 1/2 teaspoon
- Kalonji : 1/2 teaspoon
- Cumin seeds: 1/2 teaspoon
- Coriander powder: 1 tablespoon
- Mango powder ( amchur powder) 1/2 tablespoon ( 1 tablespoon mango pickle liquid can also be used)
- Salt : according to your taste
- Red chilli powder ( lal mirch powder) : 1/2 teaspoon
- Kashmiri red chilli powder: 1/2 teaspoon
- Black pepper ( kali mirch) powder: 1/2 teaspoon
- Dry red chillies ( sukhi lal mirch ) : 2
- Green chilli ( hari mirch): 2
- Turmeric ( haldi ) powder : 1/2 teaspoon
- Garam masala powder: 1/2 tablespoon
- Fresh coriander: 1 tablespoon finely chopped
Pre-Preparation:
Cut petha into nearly 1 inch pieces or according to your choice. Take out all seeds from petha. No need to peel off skin of petha.
Procedure:
- Put frypan on gas and pour 3 ladles of mustard oil or refined oil on medium flame. Add 1/2 teaspoon methi Dana and fry for few seconds to turn its colour to golden brown. Then add 1/2 teaspoon cumin seeds 1/2 teaspoon Saunf, 1/2 teaspoon kalonji and 1 tej patta, 2 dry red chillies . Add petha to it.
- Then add 1/2 teaspoon red chilli powder, 1/2 teaspoon kashmiri red chilli powder, 1/2 teaspoon black pepper powder , 1/2 teaspoon turmeric powder, 1/2 tablespoon Amchur powder ( or you can add 1 tablespoon liquid of mango pickle), 1 tablespoon coriander powder, salt according to your taste, 2 finely chopped green chillies. After adding all these, saute for 15 minutes on medium high flame. In between keep checking if petha do not start getting sticky , if that happens put 1-2 tablespoon of water and saute.
- When petha start getting soft, add 2 tablespoon of sugar or mashed jaggery . Cover the lid and cook for 10 minutes on low flame. In between, keep checking after 2-3 minutes that recipe not start getting sticky , if that happens add 1-2 tablespoons of water. When petha become soft.
- Turn off the gas , add 1/2 tablespoon of garam masala powder and sprinkle 1 tablespoon of finely chopped fresh coriander for garnishing. Petha recipe is ready to serve.
