Bottlegourd recipe (Lauki ki sabzi)

Today we will make a very healthy and delicious recipe that is 'lauki ki sabzi'
Let's do it !!
'Lauki ki sabzi':
Cooking time : 45 minutes
Servings: 4-6 persons
Utensils used:
    1 pot
    1 frypan
    1 ladle
    1 teaspoon
    1 tablespoon 
Ingredients:
  1. Bottleguard (Lauki ): 1 kg 
  2. Refined oil : 2 ladles 
  3. Cumin seeds : 1/2 tablespoon 
  4. Garlic : 6-8 pieces finely chopped or paste 
  5. Ginger : 1 tablespoon finely chopped or paste 
  6. Onion : 1 medium size finely chopped or paste 
  7. Green chillies: 2 finely chopped 
  8. Tomatoes: 2 finely chopped or paste 
  9. Coriander powder  : 1 tablespoon 
  10. Red chilli powder: 1/2 teaspoon 
  11. Black pepper powder: 1/2 teaspoon 
  12. Turmeric powder: 1/2 teaspoon 
  13. Fresh coriander: 1 tablespoon finely chopped 
  14. Garam masala powder:  1/2 teaspoon 
  15. Salt : according to your taste 
  16. Water: 250  gm or 1 cup 

Pre- preparation:
Wash lauki  and peel off skin of lauki. Cut into small pieces of nearly 1cm. Finely chop garlic,  ginger,  onions , green chillies and tomatoes.
Procedure:
  • Firstly, we make masala , so pour 2 ladles of refined oil in frypan on medium flame. When oil becomes hot,  add 1/2 tablespoon cumin seeds,  6-8 pieces finely chopped garlic, 1 tablespoon finely chopped ginger and  1 finely chopped onion . Saute for 5 minutes on medium flame.  Cover the lid and cook for 4-5  minutes on low flame or until onions become translucent.  Then add 1 tablespoon coriander powder , 1/2 teaspoon turmeric powder and 1/2 teaspoon red chilli powder. After 1 minutes add 2 finely chopped tomatoes and add salt to taste.Saute for 5 minutes on medium flame.  Cover the lid and cook for 5 minutes on low flame. 
  • When oil separates from masala , then add lauki.Saute for 10 minutes on medium flame . In between keep checking if masala gets sticky or dry . If that happens, add 1-2 tablespoons of water after every 2-3 minutes.  Then add 1 cup of water and cook for 10 minutes on medium flame.  After that cover the lid and cook for 6-7 minutes on low flame.  
  • Keep curry thick or diluted according to your choice.Lauki become soft and cooked. Turn off the gas.  Add 1/2 teaspoon of garam masala powder,  1 finely chopped green chilli.  Also, sprinkle 1 tablespoon of fresh coriander for garnishing.  Lauki ki sabji is ready to serve.
