Dal makhni recipe:
Cooking time : 1 hour
Servings: 5-6 persons
Utensils used:
1 pot

Ingredients:
- Kali urad dal ( or kali maah ki dal): 300 gm
- Refined oil : 2 ladles
- Cream ( or malai) : 2 tablespoons
- Butter : 2 tablespoons
- Tej patta: 1
- Big cardamom : 1
- Green cardamom : 2
- Clove : 2
- Cumin seeds : 1/2 tablespoon
- Garlic : 8 finely chopped or paste
- Ginger : 1 tablespoon finely chopped or paste
- Ginger julienne: 1 tablespoon
- Onions : 2 medium size finely chopped or paste
- Tomatoes: 2 finely chopped or paste or puree
- Salt : according to your taste
- Green chilli: 4 finely chopped
- Red chilli powder: 1/2 teaspoon
- Black pepper powder: 1/2 teaspoon
- Coriander powder: 1 tablespoon
- Fresh coriander: 1 tablespoon finely chopped
- Garam masala: 1/2 tablespoon
- Turmeric powder : 1/2 teaspoon
Pre- preparation:
- Wash 300 gm urad dal and soak in water for 8 hours .
- Before cooking, finely chop onions, garlic, ginger, tomatoes and green chillies.
Procedure:
- Rub the soaked dal with hands for some time and strain water. Put this soaked dal in pot, add nearly 2 litres of water, add salt according to taste and boil for nearly 30 min on high flame or until dal become 90% soft. You can check softness by pressing dal with fingers.
- For making masala, pour 2 ladles of refined oil in frypan. Add 1 tej patta, 1 big cardamom, 2 green cardamoms, 2 cloves, 1/2 tablespoon cumin seeds, 8 pieces finely chopped garlic, 1 tablespoon finely chopped ginger and 2 finely chopped onions. Saute for 10 min . In between cover with lid for 4-5 minutes and check after every 2-3 minutes if masala starts getting sticky. If that happens add 1-2 tablespoons of water.
- When onions become translucent, add 1/2 teaspoon red chilli powder, 1/2 teaspoon turmeric, 1/2 teaspoon black pepper powder and 1 tablespoon coriander powder . After 1 minute add 2 finely chopped tomatoes , add 2 finely chopped green chillies and add salt (remember we have alsoaddedsalt in dal before). Saute for 10 minutes. If it starts getting sticky add 1-2 tablespoons of water.
- When oil separates from masala, add boiled dal, add 2 tablespoons butter, add nearly 1 litre water and cook for 20-25 minutes. Dal is ready. Add 2 tablespoons cream , add garam masala, 2 finely chopped green chillies, 1 tablespoons ginger julienne and 1 tablespoon finely chopped fresh coriander for garnishing. Dal is ready to serve.
