Chicken Biryani recipe

Today we will make a mouth-watering recipe that is Chicken biryani recipe.

Chicken biryani recipe :
Cooking time : 1 hour 
Utensils used:
    1 pot
    1 frypan
    2 ladles
    1 teaspoon 
    1 tablespoon 
    1 strainer ( chhanani in hindi)
Ingredients:
  1. Chicken : 1 kg
  2. Basmati rice : 500 gm 
  3. Refined oil : 2 ladles 
  4. Lemon : 1
  5. Chicken biryani masala powder: 1 tablespoon 
  6. Tej patta: 2
  7. Big cardamom : 2
  8. Green cardamom : 2
  9. Cloves : 2
  10. Black peppers : 10 
  11. Fresh Mint leaves : 1 tablespoon 
  12. Fresh coriander: 1 tablespoon 
  13. Asafetida( Hing ) : 1 pinch 
  14. Cumin seeds : 1/2 tablespoons 
  15. Ginger : 1 tablespoon finely chopped or paste 
  16. Ginger julienne: 1 tablespoon 
  17. Garlic : 8  pieces finely chopped or paste 
  18. Onion : 2 medium size long thin  cut ( for masala)
  19. Onion : 1 medium size long thin cut ( for deep fry) 
  20. Tomatoes : 2 finely chopped or paste 
  21. Salt: according to your taste 
  22. Coriander powder : 1 tablespoon
  23. Turmeric powder : 1/2 teaspoon
  24. Red chilli powder : 1/2 teaspoon 
  25. Kashmiri red chilli powder: 1/2 teaspoon 
  26. Black pepper powder: 1/2 teaspoon 
  27. Green chilli: 4 finely chopped 
Pre-preparation: 
  • Firstly, we will marinate the chicken. Make small cut on chicken so that it can absorb ingredients. For Marination, make mixture of 1/4 teaspoon red chilli powder, 1/4 teaspoon of Kashmiri red chilli powder,  1/4 teaspoon black pepper powder,  1/4 teaspoon turmeric powder,  1/2 lemon , salt to taste . Paste these ingredients on chicken pieces and place them in a refrigerator or cool place for half an hour. 
  • Wash 500 gm basmati rice and keep them in water for 10 -15 minutes.
  • Also, cut 1 onion long thin size stripes, and deep fry in frypan until golden brown . Take them out and let them cool . We will use them later.
Procedure: 
  • Now, we will make masala in frypan or pot and also boil basmati  rice in another pot.
  • To make masala, pour 2 ladles of refined oil in frypan on medium flame. When oil becomes hot,  add 1 pinch hing, 1 big cardamom,  2 green cardamoms, 1 tej patta,  2 cloves , 1/2 teaspoon  cumin seeds,  8 pieces finely chopped garlic, 1 tablespoon finely chopped ginger and  2 long thin cut onions. Saute for 9-10 minutes. When onions become translucent,  add 1/4 red chilli powder,  1/4 Kashmiri red chilli powder,  1/4 black pepper powder,  1/4 turmeric powder and 1 tablespoon coriander powder. After 1 minute , add 2 finely chopped tomatoes, add 2 finely chopped green chillies and add salt according to your taste ( remember we will  also add salt in basmati  rice ).Cover with lid for  10 minutes until oil separates from masala. In between keep checking after every 2-3 minutes if masala starts getting sticky, if that happens  add 1-2 tablespoons of water.  Then add marinated chicken in it and cook for 20-25 minutes . In between keep checking after every 2-3 minutes,  if masala starts getting sticky then add 1-2 tablespoons of water. When chicken becomes soft, it is time to add boiled rice.
  • You can boil basmati rice before also. For boiling the basmati rice, firstly boil 2 litres water . Put 1 big cardamom,  1 tej patta,  1 tablespoon refined oil  and squeeze half lemon in it. When water start boiling , add wet basmati rice in it and cook until 90% cooked.Add salt to taste according to quantity of rice. After 7-8 minutes , check if rice become 90% soft by pressing with fingers. Then strain the excess water from rice with strainer. Leave it in strainer for 10 - 15 minutes , so that all water get strain completely. 
  • Now,  take out half chicken pieces from chicken masala.Add half of these dry boiled rice in chicken masala . Then add 1/2 tablespoon chicken biryani masala powder on this layer of rice . Also add half quantity of deep fried onions on this layer. Add those chicken pieces , which we taken out before , on this layer. Sprinkle 1/2 tablespoon of finely chopped mint leaves and 1/2 tablespoon of finely chopped fresh coriander on this layer . Add two thin strips of 1/2 lemon on this layer. Now make another layer of remaining rice over this layer.Then add 1/2 tablespoon chicken biryani masala powder on this layer of rice . Also add half quantity of deep fried onions on this layer. Add those chicken pieces , which we taken out before , on this layer. Sprinkle 1/2 tablespoon of finely chopped mint leaves on this layer. Add 2 finely chopped green chillies on this layer. Then, cover this pot with aluminium foil  and cover the lid on it. Put some weight on this lid.Gas should be in low flame. Cook for 10 minutes on low flame. Turn off the gas. You can open the lid and aluminium foil after 10 -15 minutes . Finally, chicken biryani is ready. Add 1/2 tablespoon of chicken biryani masala powder,  add 1 tablespoon of ginger julienne and 1/2 tablespoon of fresh coriander for garnishing.
