Lady's finger recipe (Bhindi masala recipe)

Today we will make a very tasty 'Bhindi masala' recipe.

Lady's finger (Bhindi) masala recipe:
Cooking time: 45 minutes
Servings: 4 persons
Utensils used:
1 frypan
1 ladle ( kadshi in hindi )
1 teaspoon
1 tablespoon
Ingredients:
- Bhindi : 500 gm
- Refined oil or mustard oil : 3 ladles
- Asafetida( hing) : 1 pinch
- Cumin seeds ( Jeera ) powder : 1/2 teaspoon
- Onion : 2 medium size roughly chopped
- Garlic : 6-8 pieces finely chopped or paste
- Ginger: 1 tablespoon finely chopped or paste
- Turmeric ( haldi ) powder : 1/2 teaspoon
- Red chilli ( lal mirch ) powder: 1/2 teaspoon
- Black pepper ( kali mirch ) powder : 1/3 teaspoon
- Green chillies ( hari mirch) : 2 - 3
- Coriander (Dhaniya) powder : 1 tablespoon
- Garam masala : 1/2 tablespoon
- Tomatoes : 2 finely chopped or 1 bowl tomato puree or paste
- Curd ( Dahi) : 2 ladles or 1/2 bowl.
- Salt : according to your taste
- Water : 1 cup
Pre-preparation:
- Cut every bhindi into 2 or 3 pieces. Also cut top and end part of every bhindi.You can also make inside across cuts in the pieces to absorb masala better.
- Cut onions roughly chopped or paste. Cut tomatoes finely chopped or paste. Cut garlic finely chopped or paste. Cut ginger finely chopped or paste.
Procedure:
- Put 2 ladles of mustard oil or refined oil into frypan on medium flame.When oil becomes hot , put all ladyfingers into frypan and add half salt and remaining half salt we will add later in masala . Fry for 15 minutes until they become 80 -85 % cooked. Take out all ladyfingers from frypan into a plate.
- Now, in same frypan add 1 ladle more mustard or refined oil. Now, add asafetida( hing) , cumin seeds , 3 green chillies, garlic ,ginger. After 1 minute add onions, cook for 5 minutes on medium or low flame , until onions become translucent. Then , add red chilli powder, turmeric powder, coriander powder . After 1 minute, add finely chopped tomatoes or puree and add remaining half salt according to your taste. Saute for 5 minutes. Cover with lid and cook on low flame for 5 minutes . In between , add 1 or 2 tablespoons of water if you find masala becomes dry or sticky. It will make it little wet. Cook until oil separated from masala. Now, take curd , mix it well with spoon and put it into the masala at low flame. Immediately stir it. Cover lid and cook for 5 minutes at low flame. Now, add ladyfingers and cover lid to cook for 10-15 minutes until ladyfingers become soft or cooked.
- Turn off the gas. Add garam masala. Bhindi masala recipe is ready to serve. Garnish with finely chopped fresh coriander.
