Potato cauliflower recipe (Aloo gobhi ki sabzi)

Today we will make a very  tasty  recipe that is aloo gobhi recipe.

Aloo gobhi masala recipe:
Cooking time: 40 minutes 
Servings : 4 persons
Utensils used:
    Karahi or pot 
    1 ladle
    1 teaspoon 
    1 tablespoon 
Ingredients:
  1. Cauliflower : 1 
  2. Potatoes : 2 
  3. Mustard oil or refined oil : 4 ladles
  4. Cumin seeds : 1/2 tablespoon
  5. Garlic : 6 pieces finely chopped or paste 
  6. Ginger : 1/2 tablespoon finely chopped or paste
  7. Ginger julienne: 1 tablespoon 
  8. Onions : 2 medium size finely chopped 
  9. Tomatoes : 2 medium size finely chopped or paste 
  10. Coriander powder : 1 tablespoon
  11. Red chilli powder : 1/2 teaspoon
  12. Green chilli : 4 chopped in stripes
  13. Black pepper powder : 1/2 teaspoon 
  14. Turmeric powder: 1/2 teaspoon 
  15. Amchur powder: 1/2 teaspoon 
  16. Kashmiri lal mirch powder : 1/2 teaspoon 
  17. Garam masala : 1/2 tablespoon 
  18. Salt: according to your taste 
  19. Fresh Coriander : 1 tablespoon finely chopped 

Pre-Preparation:
  • Cut potatoes long but not thick and gobhi medium size pieces. Finely chopped garlic, ginger, onions, tomatoes and green chillies.
Procedure: 
  • First we fry aloo and gobhi , put 4 ladles mustard oil or refined oil in Karahi or pot on high flame .When oil becomes hot,  add aloo and gobhi and fry on high flame . Add salt to taste. Keep frying nearly  5-6  minutes or until they become light brownish. Then take out aloo and gobhi from oil.
  •  Now, in same oil, we will make masala . Put 1/2 tablespoon cumin seeds, 6 pieces finely chopped garlic , 1/2 tablespoon finely chopped ginger, 2 finely chopped onions,  long stripes  of 2 green chillies in same oil. 
  • Saute for 5 minutes on medium flame.Cover the lid and cook for 4 minutes on low flame.When onions become translucent,  add 1 tablespoon coriander powder, 1/2 teaspoon red chilli powder , 1/2 teaspoon Kashmiri lal mirch powder,  1/2 teaspoon amchur powder and 1/2 teaspoon turmeric powder. After 1 minute add 2 tomatoes finely chopped or paste and add salt. Saute for 5 minutes on medium  high flame . Close the lid and cook for 5 minutes at low flame. 
  • Now, oil gets separated from masala , add black pepper powder . Then immediately add fried aloo gobhi in it. Add  300 gm or 1 glass of hot water in it. Cook for 10 minutes. In between keep checking if the recipe is not become  sticky. Now, recipe is not diluted ,but it is thick.Recipe is ready . Add 1/2 tablespoon garam masala,  1 tablespoon ginger julienne,  long stripes of 2 finely chopped green chillies and 1 tablespoon finely chopped fresh coriander for garnishing.recipe is ready to serve.
